How to make Whipped Honey Butter

Fluffy whipped honey butter with browned butter and cinnamon has the perfect mix of salty and sweet. Paired with homemade whole wheat bread still warm from the oven it is the perfect indulgent treat.

After almost two months without a working oven I was desperately craving some homemade bread. It was the first thing I made when we got our oven replaced. I love eating warm fresh bread with honey butter and I decided it was finally time to share my recipe for whipped honey butter.

Two things set this whipped honey butter recipe apart from other recipes. First, browning the butter adds a deeper almost nutty flavor. Second, adding cinnamon compliments and enhances the flavor of the honey.

Making browned butter is very simple. You just heat butter over medium heat until it turned golden brown. It’s important to immediately add the honey when the butter browned because it decreases the temperature and prevents the butter from going beyond that golden brown to being burnt.

The ice bath is really just to speed up the process of getting the honey and browned butter mixture back to room temperature. Technically, you don’t need it but it does speed things along. Place the saucepan in the ice bath being very careful to avoid water splashing into the honey butter mixture. As you whisk the browned butter and honey mixture it will become thicker as it gets colder. It may look like greasy caramel at this point, but don’t panic!

When the browned butter mixture is room temperature remove it from the ice bath and add the cinnamon and the remaining room temperature butter. Whisk it all together vigorously until the honey butter is fluffy. Serve immediately with waffles, pancakes, homemade bread, or anything else your heart desires. Refrigerate any left overs in an air tight container and use within a week.

Ingredients
  

  • 1 cup salted butter (room temperature)
  • ¾ cup honey
  • ½ teaspoon ground cinnamon

Instructions
 

  • Fill a heat proof bowl halfway with water and ice. Set aside.
  • In a small saucepan melt ½ cup of the salted butter over medium heat. Continue cooking until the butter is a golden brown then immediately add the ¾ cup honey and whisk and whisk vigorously until well combined. Remove from the heat.
  • The mixture will probably look like greasy caramel at this point, but don't panic. Place the pan in the ice bath and whisk continuously until the mixture is room temperature. Be careful not to splash any water in the honey butter mixture.
  • Remove the pan from the ice bath and add the remaining ½ cup of room temperature butter and the ½ teaspoon of ground cinnamon. Whisk until the mixture is light and fluffy.
